Olives are nutritious, healthy, tasty, easily preserved, and affordable for all. Consumption whole as either the fully ripe black fruit or as the unripe green fruit, or the extracted olive oil have a wide range of therapeutic and culinary applications. Besides, it constitutes a major component of the Mediterranean diet and its recognized health benefits.
The EcoPROLIVE project aims at testing, demonstrating, validating, and prototyping an innovative processing system for olive oil production and at least one functional food ingredient. The integral system pursues the full exploitation of the nutritive and bioactive potential of the olive with no waste generation or loss of valuable components.
